The tuna noodle bowl!

That's a nice one for people like me, who have to watch what they eat. A really easy, fresh and light recipe, for when you want some color in your bowl.

You'll need:
  • 200g tuna fillet (cubed)
  • Some olive oil
  • 2 red beets, 2 carrots and 1 zucchini (cut into noodles)
  • 2 shallots (sliced thinly)
  • 3 cloves of garlic (sliced)
  • Italian Monkey
  • 1 fresh lime
  • A few parsley leaves

Marinate the tuna cubes in a tablespoon of olive oil, a teaspoon of Italian Monkey and in the juice of a half of the lime. Just let sit until you cut up the other veggies. Saute the shallots and garlic. When soft, add the rest of the veggies. Saute for 3 minutes, season with Italian Monkey and cover. After 5 minutes, the veggies should be perfectly cooked. Soft, but still a bit al dente in the middle. Serve in a bowl with the tuna on top. Add lime wedges and some parsley.
